This spice blend is just the beginning of your pickling dreams, as you can adjust it into a perfect mixture for use in so many ways, including but certainly not limited to: Dill Pickles, Sour Pickles, Sweet Pickles, Cucumbers, Garlic, Onions, Asparagus, Ginger, Lotus Root, Tomatoes, Okra, Radishes, Mango, Peaches, Eggs, Lemons, Olives, Cabbage (Sauerkraut), Capers, Kumquats, Beets, Green Beans, Watermelon rinds, Peppers (like Banana Peppers), Chilies (like Jalapenos), Fish, Pork, Beef (like Corned Beef), and Ham.
Ingredients
2 bay leaves
2 dried chili peppers
2 teaspoons yellow mustard seeds
1 teaspoon coriander seed
1 teaspoon whole allspice
1 teaspoons dill seed
1 teaspoon black peppercorns
1 cinnamon stick
1/2 teaspoon grated nutmeg
1/2 teaspoon fennel seed
1/2 teaspoon whole cloves
1/4 teaspoon fenugreek seed
Directions
- Crumble the cinnamon stick
- Tear bay leaves into small pieces
- Cut dried chili peppers into small pieces
- Combine all ingredients to make about half a cup of the blend
- Make several batches of the blends then use your assortment on ‘pickling day’
