Healing Cuisine Recipes - Maca Apple Muffins
Prepare these soft, flavorful muffins as the perfect quick breakfast, a simple light dessert, or even a snack on-the-run. The mixture of Maca with apple is a great way to get the nutrients that boost stamina and libido. Each serving of this easily-homemade muffin contains 180 calories, 9g total fat, 30mg cholesterol, 40mg sodium, 25g total carbohydrate and 2g protein.


3/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
3/4 teaspoon baking powder
1 1/4 cups unbleached flour
1/2 cup canola oil
2  large eggs
2 tablespoons water
3/4 cup honey
1/2 teaspoon vanilla extract
1 cup chopped apple

  1. Pre-heat oven to 400 degrees
  2. Line muffin tins with paper liners
  3. Sift together Maca, flour, baking powder, cloves, cinnamon, nutmeg and set them aside
  4. In another bowl combine oil, eggs and water. Gradually add honey and beat until thoroughly combined
  5. Add the vanilla and gradually add the dry ingredients. Mix until just combined. Do not over mix. Fold in the apples and spoon the mixture into the prepared muffin tin. Fill the cups to 3/4
  6. Bake 25 minutes until cooked through 


You can choose either tart or sweet Apples to put into your Muffins, but I really prefer using a mixture of BOTH tart (like Granny Smiths) and sweet (like McIntosh) Apples to give my Muffins a rich blend of flavor that is bound to excite the taste buds. If you don't have any fresh Apples on hand, take an alternate yet effective route by adding a half a cup of plain sweetened or unsweetened applesauce.
But if you do have those fresh Apples on hand, insure that your Maca Apple Muffins have an Apple or two in every bite by either grating your Apples or simply peeling and dicing them into smaller bits and pieces.
The simplest and, in my opinion, best method to use is known as The Muffin Method; you can even use it for making pancakes, quick loaf breads, waffles, and cakes. Simply sift the dry ingredients together (with a sieve) in a mixer bowl, and then combine all the liquid ingredients together in a separate bowl. Pour the liquid mixture into the dry ingredients and stir the two mixtures together until all the flour is moistened and the batter is lumpy; do not over mix.
The best thing about having the two mixtures is that you can prepare them in advance so you can free yourself up to concentrate on other recipes, including this one. Only fill the Muffin cups up to ¾’s capacity so your Muffin tops will have a perfect dome instead of a flattened shape (which usually happens when you fill the cups all the way up).
For a truly delicious treat, place the Muffin in a small bowl, gently cut off the top, and add a scoop of ice cream between the top and bottoms of the muffin. Yummy!
For easier cleanup after baking, use paper cup liners. If you have any empty Muffin cups left, just put 2 to 3 tablespoons of water in them to keep the pan from warping.
So go ahead, enjoy this chance to create, enhance, and adjust your Muffin recipe to just the way you like it (heck, you can even add a cup of packed Pumpkin to bring out that extra Autumn taste to your Muffins!).
